The Serra da Estrela Cheese (PDO) São Gião is produced at Quinta do Tinte, in Santiago, Seia. Serra da Estrela cheese is the product obtained by slow depletion of the curd after coagulation of the raw sheep's milk (ie, without any thermal and / or chemical treatment) obtained exclusively through the milking of Bordaleira or the Churra Mondegueira breed, by the thistle (Cynara Cardunculus, L) and coming from the demarcated region.
