Black pig "farinheira" of the famous Alentejo company, Montanheira.
The farinheira is a typical Portuguese sausage. It was created by the Portuguese Jews during the time of the Inquisition, as a way of simulating the consumption of pork, which is the filling of most sausages. The farinheira is made with flour, as the name in portuguese indicates. It has the particularity of being the only sausage whose gut is not completely full. The cure is done by smoke.
